White Chocolate Cinnamon Silk Pie - #LoveThePie

I'm SO excited to be participating in Tidy Mom's 4th Annual #LoveThePie with this recipe I've developed for my White Chocolate Cinnamon Silk Pie!!! 


Truth be told, I don't know whether to say I've "adapted" this recipe, or this recipe was "inspired" by Amanda over at Amanda's Cookin' with her recipe for Homemade Baker's Square French Silk Pie but, whichever way you slice it, make it a big one, because it's THAT good and one I'm really, really proud of!  Thank you Amanda! This pie is super easy to make and the taste is sweet, but not "call the dentist" sweet. The mild yet unique flavor of the white chocolate really shines through and the cinnamon makes the perfect compliment to all that lusciousness. It's a pie that would be a perfect ending to a holiday meal or an everyday weeknight dinner.

WHITE CHOCOLATE CINNAMON SILK PIE

2 pre-baked store bought pie crusts (or go for it and make your own)
1 cup butter, softened (I always use salted because seriously, is there that much salt in butter?)
1 cup sugar
6 ounces white chocolate chips
2 teaspoons vanilla
1 tablespoon ground cinnamon
4 eggs, at room temperature
1 large tub of Cool Whip Lite

-Bake the pie crusts as directed on the package using the instructions for a cream filled pie.
-In a large bowl with a hand mixer (or a stand mixer), whisk together the butter and the sugar until very creamy and fluffy (approximately 10 minutes so that the sugar somewhat dissolves).
-Melt the white chocolate in the microwave (using 50% power) being careful not to scorch it. Check on it frequently and stir.
-Add the melted white chocolate to the butter/sugar mixture and blend thoroughly.
-Whisk the 4 eggs to the mixture and continue blending until all the ingredients are completely combined.
 -Using a wooden spoon or spatula, fold in the vanilla and cinnamon.
 -Divide the filling between the two baked crusts making sure it's a smooth even layer.
-Freeze for at least one hour.








-Using a knife or a offset spatula, top the frozen pie filling with Cool Whip (or your own homemade whip cream if you have the time) and sprinkle with a little ground cinnamon to garnish.



-Freeze again if you're not serving right away or place in the fridge if you'll be serving it soon.
-Allow to thaw for 30 minutes (if you've frozen it for another day), and serve.


Mmmmm. Mmmmmm. Mmmmmm. That is one make that two, tasty pies!!!
