 Doesn't it seem that you see the very best things while driving in a car?  That moment you might have been waiting for, but never comes, when you have time and a proper camera at hand.  So what do you do?  Instead of keeping these visions as a memory, I try to get the picture if I can.  I call it my "Drive-by Shooting"!  We've had some great clouds this past week and I found myself gazing up at the sky more often than not this.  So when my husband was driving us to go on an adventure this weekend it was no exception.  I took advantage of the inspirational sky and grabbed my phone and snapped this picture at 65 miles per hour!  It was one that surprised me and did turn out well.  It's also turned out to be one of the favorites of my Instagram followers too.  I loved the type of clouds we had that day.  So interesting.   I loved how the clouds reflected in the mirrored glass at City Center.  I sure am glad I didn't let that moment in time go by without catching it to share with my friends and remember forever.


Fiery Desert Sunset

Another favorite example of seizing the moment with a "Drive-by Shooting" was just a few months ago.  I was driving back from a photo shoot out at the Dry Lake.  Driving home, as we came around the corner from Boulder City into the Las Vegas Valley, I was stunned to see such a fire in the sky.  It was absolutely the most incredible Fiery Sunset I have ever seen.  The sky actually had that "End of The World" look to it.  Amazing!  Of course Sunset's never last that long and are ever-changing so you must take the picture while you can.  You can actually see my silhouette in the car window.  I am thankful for technology being such that we have so many ways to take a great picture.  Yes it's true that memories can last forever but having a picture makes the memories come alive over and over again.  So do you have any great photography moments or drive-by shootings, or was your big photo opportunity the one that got away?

Morning Views from the Walking Trails at Pittman Wash

Happy Fitness Friday everyone!  Active or not, walking and hiking around on trails in your own home town is something that anyone can do.   Here are some ideas found in my hometown.  I'm sure you could find someplace similar in yours.  Whether I like it or not, Fall is nearly here.  Yes I am that one person that never wants Summer to end or to give up that famous Summer Sizzle heat that Las Vegas is known for.  The good news is that early mornings are now cool enough to go outside and enjoy some fun!  It all started last Friday when Mr. Hat and I decided to do our fitness walking outside that morning instead of inside at the gym.  Fresh air, beautiful views, other friendly people on the trails, and seeing a few little wild creatures along the way made for an interesting morning.  The City of Henderson has turned a natural wash area into miles of trails called the Pittman Wash Walking Trails. ~free activity

 I enjoyed being outside on Monday and enjoying the Labor Day Holiday at Springs Preserve.   Exploring, walking the nature trails and then dining on the terrace with an incredible view of Las Vegas.  It is always fun to hike around in such a historic place as the spot that started it all for Las Vegas.  It was a last minute decision that turned out to be a perfect afternoon. ~free activity for trails and many areas, fees for museums but check their website for opportunities of free days


Rock Climbing at Calico Hills
A spur of the moment rock climbing adventure turned out to be the best idea ever on Saturday.  I am so lucky to live near such beautiful locations to explore.  I'm thankful for perfect weather to explore in and the freedom to explore where and when I want to.  America is a great country and we need to remember that the next adventure is only as far away as your own backyard.  Just outside of Las Vegas a favorite spot to rock climb and hike is Calico Hills Trails.  This is located one exit before the Red Rock loop turn off.  ~free activity

Last week found us exploring , hiking and taking pictures near Duck Creek at the Wetland Park.  Recent rains have made it so beautiful there and alive with birds, bunnies and other wildlife.  The trails are fun for both biking riding and hiking.  If you arrive early in the morning you can spot many different variety of birds.  ~free activity

Thursday morning I was able to take an early morning hike back up to Red Rock Canyon, this time hiking on the Red Rock side of the mountain, from Calico Hills.  I am still amazed at the beauty, colors,  textures and designs of the sand stone mountains found there.   ~small entry fee or buy a pass, check their website for opportunities free days

I love finding such HUGE boulders and find my self trying to put the puzzles together of where these rocks would have been fuzed together million years ago.  I had the chance this time to take a friend, who is a first time visitor from France, to see the incredible rocks.  They are always amazed by the beauty, colors, and size of the Red Rock Canyon.  I love seeing it through new eyes!

Every time I go rock climbing up at Red Rock it seems to be that we never take the same path twice.  This trip up we explored some great views like this, saw some interesting windows in the rock and a small cave.  We only hiked  up about halfway to the top this time, but got some great pictures.  Due to the recent rain we have had in Las Vegas, there were some ponds of water and a tiny trickling waterfall.


High on a Mountaintop!
Yes sometimes last minute trips to the mountains after pilates class, finds you without proper footwear and you can either pout about it and not go, or have fun climbing and take that perfect "Toe Peek" shot!  Yes proper footwear is best for hiking, walking and climbing outdoors.  It could be helpful to keep an extra pair of shoes in your car, but then you would probably not even take your own car on the day you need it anyways.  So there you have it!  So many fun and free activities that everyone will enjoy, and right in our own backyard, here in Las Vegas too.  When going on a nature walk some other things to have with you are water, sunscreen, cell phone, energy bar, and the perfect hat!  SO tell me... where will you explore next?

I feel strongly that every child should be taught the importance of clean and fresh gardening and eating.   It would be great if there was a fresh salad bar in every school.  I'm proud of Whole Foods for leading the way.  The sooner we provide healthy options for our children, and lead them by example, the better things will be for all of us.   I'm happy to eat a delicious salad on Sunday to do my part.  I will make it easy for you to participate if you simply follow and retweet me then too.  I hope you treat your body right, and help a child on Sunday, when you enjoy a salad too!  What are your thoughts about it?

My Las Vegas View of the Statue of Liberty
We Will Never Forget

Every time I drive down the Las Vegas Strip, past our version of the Statue of Liberty at New York New York Hotel,
 I think of every early immigrant who has gone before and sacrificed for us, every branch of the military who has fought for our freedom, every brave firefighter and police officer that look out for us and all of the innocent lives that were tragically lost on 9-11. 
We will never forget!

Dry Lake Flooded {Travel}

Sometimes it does storm in the desert, and when it does there is a chance for a flash flood to occur.  We've been lucky enough this Summer of 2012 to have a few of these.  We're now into Fall but were able to see yet another Desert Storm and Flash Flood today.

It's been raining now for over 24 hours and will end sometime tomorrow afternoon.  When we do get this type of flash flood bringing large amounts of water in a short amount of time, the dry desert ground cannot soak any of it up.  So the brittle dry grounds at the Dry Lake are quickly flooded.  My son took us out for a drive today to do some storm-chasing of our own.  We ended up just outside of Boulder City, Nevada at the Dry Lake.  It was beautiful to see and fun, until he started doing donuts in the mud!

The desert is a dry place so when we do get a bit of rain, the natives get excited and run out for some fun!  Playing in the mud is very different than the usual activities that take place on the Dry Lake Bed during the rest of the year.  You might usually see photo shoots, windsurfing, go kart or cycle racing, firework shows, etc.  Have you ever been to a Dry Lake that has been flooded?  Have you been in a flash flood before?

Rumor has it that for years The Amazing Johnathan, the long time Las Vegas comedian/magician headliner, has planned, staged and hosted his own private Haunted House for friends.  Lucky for the rest of us, this year his creations have turned into a horror filled Haunted Hotel.   Known as The SCREAMont Experiment , this haunted house is sure to creep out even the bravest in the bunch.   Last night I had the opportunity to attend the star-studded red carpet event and then venture into Jonathan's world for a while, whether I was ready or not.

Nearly ever one I know has a FEAR of a creepy clown and the clown here ranks up there with the best of them.  Just look at him and you get chills!  There were also freaks and creeps of all types found both on the Red Carpet and in the Haunted Hotel.  Yes I did get scared and yes I did SCREAM!  I was creeped out and couldn't get out of that confusing maze and 2-story hotel, elevator ride included, fast enough!  Ahh!  Just thinking about it gets my heart beating faster again.  So by now you might realize that The SCREAMont Experiment is HORROR-filled in every way and is definitely a PG13 event.  Oh and be warned,  YOU will be chased and TOUCHED by CREEPS and quite possibly get a teeny bit wet!

The SCREAMont Experiment can be found in the back of The Las Vegas Club on Fremont Street in Las Vegas.  It's now open and will continue to scare hotel guests every night, from 7pm till midnight, through Halloween.   General admission is $20 at the door.  Enter if you dare...  So tell me, will you be among the brave?  What scares you?

Wonton Cups

All week, I've been looking forward to the weekend. Not just because it's the weekend, but because I have been planning to make homemade egg rolls. And finding this awesome orange chicken recipe yesterday sealed the deal for Chinese take-out-made-in night.

What does this have to do with wonton cups, you ask? Well, after making up all the egg rolls, I had quite a bit of filling left over. While the filling is certainly delicious on its own, I wanted some sort of cute vessel in which to present them. Enter wonton wrappers.

















This could possibly be the easiest recipe in the world, and a great base for many cute appetizers. Here, I just brushed the wonton wrappers on both sides with canola oil, and gently pressed them into a cupcake pan. Bake in a preheated 375 degree F oven for 5 minutes. Let cool slightly before removing. Spoon in desired filling; in my case, an Asian-inspired salad.

I'm already dreaming of many other uses for these cups. A light coating of cinnamon and sugar, and you have a dessert cup... Ready to be filled with chocolate mousse or a small scoop of ice cream. Or, sprinkle with garlic and taco seasoning before adding some taco salad. The possibilities are endless!

Chicken Noodle Soup

I'll use any excuse in the book to whip up an oversized stockpot of soup. What can I say? I'm a soup fanatic. Even on the hottest of July days, I can be found making a steaming pot of chili or clam chowder. You know how Bubba felt about shrimp in the movie Forrest Gump? That's how I feel about soup!


















So when my husband came down with a cold a few days ago (the first in this household all season), I had my excuse. It was time to pull out the classics - nothing makes you feel better than a big bowl of homemade chicken noodle soup. The ingredient list may be long, but this soup comes together in a snap.

Ingredients
4 Tbs. unsalted butter
2 Tbs. olive oil
1 large leek, halved and thinly sliced
2 c. chopped carrots
2 c. chopped celery
6 cloves garlic, finely chopped
2 tsp. salt
1 tsp. black pepper
1/4 c. flour
2 c. (packed) cooked and shredded chicken
10 c. chicken stock
1 tsp. dried thyme
1 tsp. dried marjoram
1 tsp. poultry seasoning
1/4 tsp. dried dill
2 bay leaves
2 1/2 c. egg noodles
1/4 c. fresh flat-leaf parsley, finely chopped
additional salt and pepper to taste

Directions
In a large stockpot over medium heat, melt butter with olive oil. Add leeks, carrots, celery, salt* and pepper. Cook until slightly softened, about 5 minutes. Add garlic and cook an additional minute. Sprinkle in the flour and stir to combine. Cook for 2 minutes.

Add chicken stock, shredded chicken, and remaining seasonings. Bring to a boil, then reduce heat and simmer until vegetables are barely soft, about 15 minutes. Add egg noodles and parsley, and cook until noodles are soft, about 10 additional minutes. Taste for seasonings, adding additional salt and pepper as needed. Enjoy!

*Note: Feel free to adjust the amount of salt, depending on the type of stock you use. Mine was nearly salt-free, so I needed to add more than usual. It's better to start lower, and add as necessary.

Cottage (Shepherd's) Pie

A few short days ago, I told you about how my husband had come down with a severe cold. It should be with little surprise that I am now, too. With every last drop of chicken noodle soup now consumed, I had to turn to another comfort food for some relief.

















We call this dish shepherd's pie around here; however, its correct name is cottage pie. From what I understand, both dishes are basically the same with the only variation being the type of meat used in the dish. For shepherd's pie, lamb is used. For cottage pie, beef is used.


Regardless of what we call it, cottage (shepherd's) pie is hearty comfort food at its best. Serve with warm biscuits or crusty bread... A perfect meal for warming a sick, old soul on this cold and blustery April day.

Ingredients
5 medium-sized potatoes, peeled and cubed
3 Tbs. sour cream
1/4 c. milk
1/2 c. mozzarella cheese, divided
1/4 c. Parmesan cheese

1 to 1 1/2 lb. ground beef
1 pkg. brown gravy mix
1 c. water
3 Tbs. Worcestershire sauce
2 Tbs. ketchup
3 garlic cloves, finely chopped

3 carrots, diced
2 medium onions, diced
2 celery stalks, diced
1/2 green pepper, diced
1/2 c. frozen corn
1 tsp. Italian seasoning

salt and pepper
2 Tbs. butter
2 Tbs. olive oil

Directions
Preheat oven broiler.

In a medium pot, cover potatoes with cold water and bring to a boil over medium heat. Cook until completely soft. Drain and mash. Add sour cream, milk, 1/4 c. mozzarella cheese, Parmesan cheese and salt/pepper to taste. Mix to thoroughly combine. Set aside.

In a large skillet over medium heat, brown ground beef. Drain any fat, then return to skillet. Add garlic, brown gravy mix, water, Worcestershire sauce, ketchup, and salt/pepper to taste. Mix well. Reduce heat to low and simmer until most of the liquid has evaporated. Spread evenly into a medium sized casserole dish. Set aside.

In the same skillet, heat butter and olive oil over medium heat. Add vegetables, Italian seasoning and salt/pepper to taste. Cook until softened, about 10 minutes. Spread evenly over meat mixture. Spread mashed potatoes evenly over vegetable layer. Top with remaining 1/4 c. mozzarella cheese. Place in broiler to brown potatoes and cheese, about 2 to 3 minutes. Remove from oven and let cool slightly before serving.

Wilton Cake Decorating Course I - Class I and 2

My birthday came a little earlier this year. My husband signed me up for Wilton's Cake Decorating I course, and purchased a nice little set of decorating tools for me. While my birthday isn't technically for another week, I've already had a blast playing around with various piping tips and bookmarked many of the beautifully decorated cupcakes and cakes scattered across the blogging sphere to try in the near future.



















I am taking the course, which consists of four classes, at a local Michael's. While baking and basic decorating isn't completely new to me, I figured for $17, I could pick up some additional skills and tricks from a seasoned instructor.


The first class was very basic, with the instructor reviewing how to make homemade frosting, achieving various colors and consistencies, and basic cake frosting. Nothing monumental here, folks. Our instructor, Sarah, is very friendly and personable.

The second class, which took place yesterday night, jumped right into decorating techniques. We learned about different decorating tips and practiced a few basic piping techniques on our practice boards. This included the round tip, star tip, and some beginning rose work. By the end of the two hour class, we each had (at least partially) decorated our own cakes, which we had pre-made and frosted before class.

Luckily, we were not forced to make the lame cakes presented in the book for lesson 2; instead, Sarah allowed us to bring in a design of our choosing. Since right now, I'm totally digging the retro design scene, I found a cute little retro-ish bird to pipe onto my cake. Cute, as well as practical, since it was not very complicated and I was able to nearly finish by class close.


















Overall, I am thoroughly enjoying the class and pleased with my birthday gift this year! I'll check in again next week with the results of Class 3.

My husband served a two-year mission in Paris, France for our church some years back. He came home with this awesome little French cookbook. When we first got married, he started making crepes for me.
Now, before we go any further, I need to tell you that because my husband is fluent in French, he is very particular on how you say the word CREPE. If you just read that word and thought CRAPE - you would be wrong. :) The E sound is pronounced like Eh. The French way to say the word is: Cr-eh-p. Crepe. Doesn't that just make you feel French to say it like that?!
Back to my story...my hubby ended up changing the recipe in the cookbook several times (you should see the margins, all scribbled out and rewritten) and has made up his own version that are AMAZING. Like, best crepes EVER. My kids beg him at least once a weekend to make them. Poor guy.
Last weekend, we had the pleasure of having my in-laws in town for the weekend (Six Flags, baby!!) and what better excuse to bug dad into making crepes for the family?! So I pulled out my camera and begged him to let me take pictures and share his secret recipe for his famous 'Chef Cory Crepes'. He finally agreed! YAY!FRENCH CREPES:Ingredients: 
  • 3 cups flour
  • 6 eggs
  • 5 cups milk
  • 1/4 tsp. salt
  • 3/4 cups sugar
  • 3 Tbsp. oil
  • 1 tsp. vanilla
Directions:1) Mix all ingredients together in large mixing bowl with whisk.
2) We have a crepe pan but you can use any small (about 8") nonstick pan. Turn up your heat on your burner to medium-high. Spray your pan generously with cooking spray and pour a small amount of batter on your pan (just enough to cover the bottom of the pan). Rotate pan around until batter covers the entire bottom surface in a thin layer. 
3) Cook until edges of crepe start to raise and bubbles begin to form underneath (as below)4) This is what takes a bit of practice...shake the pan a little until the crepe is loosened and FLIP! You can also use a spatula to help out. :)5) Cook for an additional 30 seconds and serve warm with your favorite toppings! This recipe makes tons of crepes! I like to serve them with cut up fruit, fruit jam and whipped topping and my kids like cinnamon and sugar sprinkled inside and then rolled up (as below). There are tons of ways to enjoy these!Here's my bro in law devouring his crepe!The hubs says folding them in half once and then in half again, as the picture below, is the French way of eating a crepe. ENJOY!!

Peachy Keen {No Bake} Cream Cheese Pie

You ready for another yummy pie recipe?!I think I went a little crazy in the produce section. Everything was on sale - peaches for .89 cents a pound, kiwi 3 for $1.00 and berries are super cheap this time of year in So Cal! So I got home from the grocery store and had no clue how I was going to use everything up before it went bad.

Introducing you now to the Peachy Keen {No Bake} Cream Cheese Pie! It has a yummy crust made out of vanilla wafers, that gets topped with sliced peaches, kiwi & raspberries, and then topped with a cream cheese mixture that is too die for! It's so light and refreshing, the perfect dessert for a hot summer night. Plus, your house will stay cool because you don't need to turn your oven on to cook it!

I'm drooling just looking at these photos. This pie is the bomb.
First step, make your crust:1 cup crushed vanilla wafers 1/4 cup melted butterPress into pie pan...Slice one large, ripe peach and layer on top of the crust:Slice two ripe kiwi and layer on top of the peaches:Layer 1/2 cup raspberries on top of the kiwi:
{I love the colors!}Mix your cream cheese mixture. Cream together:1 (8-oz) package cream cheese, softened (I used light)1 can sweetened condensed milk1/3 cup lemon juice1 tsp. vanilla Pour your cream cheese filling over the fruit:
Spread to cover...Cut into slices and enjoy! How simple is that?! Make sure to keep it chilled in the refrigerator!
PEACHY KEEN {NO BAKE} CREAM CHEESE PIE:Ingredients:
  • 1 cup crushed vanilla wafers
  • 1/4 cup melted butter
  • 1 (8-oz) package cream cheese, softened
  •  1 can sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 tsp. vanilla
  • 1 large peach, peeled and sliced
  • 2 kiwi, sliced
  • 1/2 cup raspberries
Directions:1) Combine crushed vanilla wafers and melted butter. Press into pie pan to make crust.
2) Cream together softened cream cheese, sweetened condensed milk, lemon juice and vanilla.
3) Arrange sliced peaches on top of the crust. Then layer the sliced kiwi and raspberries. Top with cream cheese filling and chill in refrigerator. Garnish with additional raspberries and kiwi slices if desired. Enjoy!

Skinny Cheesy Pasta Bake

This pasta bake is so tasty and guess what?? It's healthy too! Made with ground turkey and whole wheat penne pasta, it will fill you up and satisfy that comfort food craving! It makes such a big pan, you'll most likely have leftovers for lunch the next day. You're welcome. ;)
SKINNY CHEESY PASTA BAKE: (recipe adapted from Allrecipes)Ingredients:
  • 1 pound whole wheat penne pasta
  • 1 onion, chopped
  • 1 pound lean ground turkey
  • 2 (26 ounce) jars spaghetti sauce
  • 1 carrot, chopped
  • 6 ounces provolone cheese, sliced
  • 1 1/2 cups reduced-fat or fat free sour cream
  • 6 ounces mozzarella cheese, shredded
  • 2 tablespoons grated Parmesan cheese
Directions:
  1. Preheat oven to 350 degrees. Lightly spray bottom of a 9x13-inch baking dish with cooking spray.
  2. Bring a large pot of lightly salted water to a boil. Add penne pasta and cook until al dente, about 8 minutes. Drain.
  3. Heat a large skillet over medium heat; cook and stir onion and carrot until onion is translucent and carrot is crisp-tender. Add the pound of turkey. Cook until it is no longer pink, about 7 minutes. Add spaghetti sauce and simmer until heated through, about 5 minutes.
  4. Layer ingredients into prepared baking dish as follows: half the cooked penne pasta, provolone cheese, sour cream, half the sauce mixture, remaining penne, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.
  5. Bake in preheated oven until cheeses are melted, about 30 minutes.
