If so, I have a new twist to liven up your old loaf and it was inspired by Elvis Presley himself! LOL!! Not really. I just remember that Elvis was a huge fan of fried peanut butter and banana sandwiches.
Truth be told, this recipe was more inspired by little old me, who is a wild-eyed peanut butter-aholic (I've been known to eat it with a
PEANUT BUTTER BANANA BREAD
4 over-ripe bananas, mashed
2 eggs
1 1/4 cup brown sugar
1/2 cup softened butter (plus a little more to butter the pan)
1 1/4 cup creamy peanut butter
1 teaspoon vanilla
1 teaspoon coconut extract
1 teaspoon salt
1 1/2 teaspoon baking soda
1 1/2 cup honey roasted peanuts, chopped
2 cups all purpose flour (plus 1 tablespoon for the pan)
-Preheat oven to 350 degrees
-In a large bowl, whisk the mashed bananas, eggs and the brown sugar.
-Add in the butter, peanut butter, vanilla and coconut extract. Continue whisking until well combined.
-Switch to a wooden spoon and stir in the flour, baking soda and salt. Mix well.
-Add the chopped peanuts and stir well to combine.
-Butter and flour a large loaf pan and spoon the batter evenly into the prepared pan.
-Bake for approximately 1 hour or until a toothpick inserted into the center comes out clean.
-Cool on a wire rack for at least 45 minutes.
-Slice and Enjoy!
